This recipe is just an easy quick chuck together kind of meal. Its meat free which is exactly what I felt like tonight after Christmas and the last few days eating a lot of meat. Yes it’s quite high in carbs and fat, but after today’s workout it’s just what I need.
*Note*. Make sure you keep a close eye on the chips as kumara burns easily, it’s better to have the temp low (even lower than what I’ve suggested) and cook longer if you have time. However I was hangry so that’s why I cooked it on a slightly higher temp.
Chips 1 large orange Kumara (sliced thinly)
2 tsp. Smoked Paprika
1. Mix melted oil and spices together
2. Dip Kumara pieces into mixture and place on baking trey. 3. Bake @ 190 until crisp and brown.
1/2 Small Red Onion (thinly sliced)
Fresh Lime Juice from 1 Lime
1 Small Juicy Red Tomato (diced)
Bunch chopped coriander (optional)
Salt and pepper to taste
1. Mash avocado
2. Add rest of ingredients mix well.
Cover and store in fridge until ready to serve.
