Easy Homemade Gravy

LCHF, Paleo, Keto, Gluten Free, Dairy free, No preservatives and No thickeners.   Who doesn’t love gravy, especially on these cold winter days when you just want comfort food!  I always cook my roasts with at least a couple of carrots, 1 red onion and garlic, and then use this as a base to make my gravy. All the tasty juice from the meat and veg and any spices you have used just make the best gravy and beats the horrible packet stuff any day. Kid approved ... Chicken and Pumpkin soup with a touch of Ginger.

This has to be one of the tastiest and easiest recipes ever. Just chuck it all in a crockpot and leave it to cook while you go about your day.  This works well for us with both of us working and we have little mouths to feed.  So this works perfectly with our schedules.  Nothing better than coming home and dinner is already cooked! This meal is Paleo Friendly, Gluten Free and Dairy free. It is reasonably low carb even though it has pumpkin it is minimal. Turmeric is a great anti-inflammatory spice (there pretty much isn’t a meal where I don’t use it). And Ginger gives it a kick plus helps aid digestion.    *Feel free to add more...

Yummy gummies for a healthy tummy!

Yummy gummies for a healthy tummy and healthy immunity to fight the winter bugs! These gummies are great for getting vitamin c and Gelatin into your little ones tummies. They love the texture of the gummy and you can also make a jelly (half the amount of Gelatin below). These Jellies don’t contain any sugar, but if you wanted to sweeten you could had a little honey but I didn’t feel the need.  I have made two versions one is Orange  and the other is coloured with Acai berry powder (a powerhouse superfood). Chicken and Kumara in a Coconut!

Chicken and Kumara in a Coconut Shell. How about it! Chicken, Coconut and Kumara served in a half coconut shell! This was so easy looks cool and is delish. Ingredients:  1 Coconut shell (with or without meat) Coconut meat from 1/2 a coconut 1 Cooked chicken breast 1 Small yellow Kumara (boiled) A handful of spinach leaves Oil for cooking Salt and pepper for flavour.  Instructions: 1. Heat oil in a pan 2. Add chicken, coconut, Kumara and cook until heated through. 3. Add spinach, salt and pepper. 4. Spoon into a coconut shell and serve.
