This is something i just whipped together for my lunch today. I've had a pot of chicken broth simmering away for the last 24 hours, and knew i had some cooked chicken breast in the fridge, chucked in some broccoli and cauliflower and bang lunch is severed!
This is a low carb version but you can add other vegetables or starch like Kumara. I find with that amount of chicken it fills me up so no need for the carbs today.
P.S as i mentioned above i used a home made broth , but you can use store bought i would recommend The Essential Broth Co
2 cups chicken broth
1 large floret of Broccoli and Cauliflower
1 large chicken breast (or 2 small ones if your hungry)
Chuck it all into a saucepan and boil until heated through.
Add Salt and Pepper and why not some Turmeric to give you those extra good health dose.
