Kid approved ... Chicken and Pumpkin soup with a touch of Ginger.

This has to be one of the tastiest and easiest recipes ever. Just chuck it all in a crockpot and leave it to cook while you go about your day.  This works well for us with both of us working and we have little mouths to feed.  So this works perfectly with our schedules.  Nothing better than coming home and dinner is already cooked! This meal is Paleo Friendly, Gluten Free and Dairy free. It is reasonably low carb even though it has pumpkin it is minimal. Turmeric is a great anti-inflammatory spice (there pretty much isn’t a meal where I don’t use it). And Ginger gives it a kick plus helps aid digestion.    *Feel free to add more...

Smoked Salmon and Chive Bake with a Lemon Coconut Dip

I made this last night for dinner. I had smoked some fresh water salmon on the smoker, and had it left over so came up with this concoction as I needed to eat the salmon before it went off. The smoked Salmon and Coconut yoghurt make this dish a high fat low carb meal that leaves you feeling really full and satisfied. Serving size is for 1 person but you can just double it if you want to make it for 2 or more. Beef Curry in just 20min 2x Pre-cooked Safari Biltong Beef Sausages (these just contain meat and spices)!! Half cooked kumara (chopped) 1/4 courgette (chopped) Yellow capsicum Spinach leaves 1/2 tsp curry powder 3 tsp coconut cream Heat pan add sausage, Kumara and courgette, cook on medium heat for couple minutes. Add in capsicum , spinach, curry powder and coconut cream. Mix well until all combined and serve as is! Yum
