I made this last night for dinner. I had smoked some fresh water salmon on the smoker, and had it left over so came up with this concoction as I needed to eat the salmon before it went off. The smoked Salmon and Coconut yoghurt make this dish a high fat low carb meal that leaves you feeling really full and satisfied.
Serving size is for 1 person but you can just double it if you want to make it for 2 or more.
For the egg mixture
100g Smoked Salmon
2 large eggs
Chopped fresh chives
Salt and pepper
Mix all of the above in a bowl and pour into a round ramekin
For the coconut yogurt mixture
½ cup coconut yogurt
Zest from ½ lemon
Juice from ½ lemon
Mix all of the above in a bowl then pour into the centre of the egg mixture.
Bake on 180c for 20mins or until the egg mixture is cooked. The coconut mixture will stay runny this is the idea so you can scoop up the yummy lemon dip with each bit of Salmon! Top with toasted Sunflower and Pumpkin seeds.
