Apples and Blueberries are such a great combo. I’ve added in an egg to get some protein in at the same time. You could add protein powder if you prefer, but I find it always gives the porridge a lumpy curdled texture.
1 large green apple diced
Knob of butter
1/3 cup oats
1 cup Milk (if dairy-free use coconut or almond)
Vanilla Bean Extract
Place the butter, apple, cinnamon (add to your liking) & chopped almond into a small pan over medium heat. Add the oats, milk to a pot, whisk in the egg, Let the oats come to a simmer and allow to gently bubble for 1 minute, stirring constantly. Once thickened add in cinnamon, vanilla extract and ½ cooked apple and blueberries.
Transfer the cooked oats to 2 Coconut Bowls. Garnish with a few more blueberries and apple/nut mixture.
